Ingredients
- 4-6 - large potatoes
- - salt
- 1 - onion, thinly sliced
- 1tsp - oil
- 3Tbs - butter
- 3Tbs - flour
- 2c - milk, infused with a thyme sprig
- - salt and pepper
- 100g - medium blue cheese
- 4-6 - slices shaved ham
Method
1 Cut deep slits in each potato. Lightly season with the salt, also in the slits. Fill each alternative slit with thinly sliced onion rings. Arrange the potatoes in the air-fryer tray, drizzle with a little oil and air-fry till done and crisp for about 25-30 minutes. (Cover with foil if it becomes too dark on top before it’s cooked.)
2 Melt the butter, stir in the flour until smooth, add the milk and stir until the mixture thickens. Season with salt and pepper. Add half of the cheese and stir until melted.
3 Arrange the potatoes in an oven dish and pour over the sauce. Top with the rest of blue cheese and grill in the air-fryer until bubbly. Top each potato with a slice of ham.
