Ingredients
- 30ml - olive oil
- 2 - chopped onions
- 2cloves - crushed garlic
- 500g - beef mince
- 60ml - red curry paste
- 2 - chopped carrots
- 2 - chopped celery
- 1 - chopped tomato
- 650ml - water or stock
- 1 - chopped apple
- 60ml - sultanas
- 2Tbs - brown sugar
- 2Tbs - white vinegar
- - TO SERVE
- 250ml - cooked rice
- - fresh coriander
- - lime wedges
Method
1 In a large saucepan, heat the oil on high. Sauté the onions and garlic for 3-4 minutes until tender. Add the mince and cook for 4-5 minutes until browned, breaking up lumps with the back of a spoon. Stir in the curry paste and cook for 1-2 minutes until fragrant.
2 Stir in the vegetables, followed by the water or stock. Bring to the boil on high, then reduce the heat to low and simmer, uncovered, for 10-15 minutes until the vegetables are just tender.
3 Mix in the apple, sultanas, sugar and vinegar. Simmer for 10-15 minutes until thickened.
4 To serve Serve the curry on the rice, topped with the coriander and lime wedges.
