Ingredients
- 375ml - couscous or bulgur
- ½ - cooked chicken
- - DRESSING
- - juice and finely grated zest of 1 lemon
- 60ml - olive oil
- 5ml - cumin seeds, toasted
- - TABBOULEH
- 1 - red pepper, diced
- 1 - yellow pepper, diced
- 500g - cherry tomatoes, halved or quartered
- 125g - baby spinach, coarsely shredded
- - handful of fresh coriander, chopped
- - handful of fresh parsley, chopped
- - leaves of 1 sprig of fresh mint, finely chopped
- - salt and freshly ground pepper
Method
1 Prepare the couscous or bulgur according to the package instructions. Fluff with a fork and set aside to cool.
2 Debone the chicken and shred coarsely. Mix into the couscous or bulgur.
3 Dressing Whisk all the ingredients together and pour over the salad. Mix well.
4 Tabbouleh Mix the peppers, tomatoes, spinach and herbs into the salad. Season with salt and pepper.
