TOAD IN A HOLE
Serves: 4
Prep time: 15 mins
Ingredients:
- 8 thin chicken sausages
- 1 red onion, thinly sliced
- 1 clove garlic
- 1 sprig rosemary
- 2 T olive oil
- 1⁄2 cup our
- 3 eggs
- 1 cup milk
- 2 tsps whole grain mustard
- Pinch cayenne pepper
- Salt and black pepper
Method:
1. Preheat oven to 200°C. In a skillet, place sausages, onions, garlic, rosemary and olive oil. Roast for 10 minutes, turning everything once so it cooks evenly.
2. Meanwhile, mix our, eggs, milk and mustard until it becomes a smooth batter. Season with cayenne, salt and pepper.
3. Pour batter over the sausages and continue to bake for 30 minutes until batter is puffed up and golden. Serve warm.
