Carrot and Cucumber smoothies

Makes: 2 cups

Prep Time: 5 mins for each drink

Ingredients:

  • 2 large carrots, chopped
  • 1/2 pineapple, cut into cubes
  • 1 cm stalk ginger, finely chopped
  • 3 T honey
  • 1 cup ice cubes
  • 1 bunch spinach, chopped
  • 1 cucumber, chopped
  • 1 apple, chopped
  • 1 bunch mint
  • 3 T honey
  • 1 cup ice cubes

Method

1. In a blender, place carrots, pineapple, ginger, honey and ice cubes.  Blend until smooth and thick. Remove and set aside.

2. In the same blender, place spinach, cucumber, apple, mint, honey and ice cubes. Blend until it's smooth and thick. Serve both chilled.
