Jolene Nichas’ lemon loaf
Ingredients
- 125 g softened butter or margarine
- 375 ml castor sugar
- 2 eggs
- 375 ml self-raising flour
- 2 ml salt
- 125 ml milk
- Zest of 1 lemon
- 50 ml lemon juice
Preparation
Step 1: Preheat oven to 180 °C.
Step 2: Spray a loaf tin with Spray & Cook and line the bottom with baking paper.
Step 3: Beat together butter/margarine, 250 ml castor sugar and eggs.
Step 4: Sift together flour and salt and stir into butter mixture, alternating with the milk.
Step 5: Add lemon zest and mix.
Step 6: Spoon batter into loaf tin and bake for 45 to 60 minutes until cooked.
Step 7: Mix 125 ml castor sugar with the lemon juice.
Step 8: Prick the loaf with a fork as soon as you take it out of the oven and cover with lemon syrup.
Step 9: Leave to cool in the tin.
Step 10: Turn out and carefully remove the baking paper.
Step 11: Serve with tea or coffee.
