Jolene Nichas’ orange cake
Ingredients
- 150 g soft margarine
- 500 ml cake flour, sifted
- 300 ml castor sugar
- 15 ml baking powder
- Pinch of salt
- 3 large eggs
- 100 ml milk
- 50 ml orange juice
- Zest of 1 orange
Preparation
Step 1: Preheat oven to 180 °C. Spray two cake tins with non-stick cooking spray and line bottoms with baking paper.
Step 2: Mix soft margarine with dry ingredients. Add eggs, milk and water.
Step 3: Mix until mixture is smooth. Spoon into cake tins and bake for 25 to 30 minutes. Turn out on cooling racks.
Icing
Step 1: Mix ingredients until creamy and spread between the two layers as well as on top.
Step 2: Garnish with orange zest.
