This tart tastes like a giant pumpkin fritter, complete with a cinnamon blanket, but is much easier to make.
1. Preheat the oven to 180 ºC. Add all the ingredients, except the cinnamon, to a mixing bowl and use a stick blender to blend until smooth.
2. Pour the batter into a greased baking dish and bake for about 50 minutes or until set. Allow the tart to cool, cover tightly and freeze – or serve immediately with a sprinkling of cinnamon.
