You’ve probably heard this a million times: “Eat your vegetables – it’s good for you!” To be honest, you’re probably not all that fond of vegetables. But it’s best to listen to good advice – especially when it comes to eating your veggies.

Vegetables come in many shapes and sizes, each with its own distinct flavour. There are root vegetables such as radishes and carrots; tubers such as potatoes and sweet potatoes; leafy greens such as lettuce and spinach; edible stems such as celery; flowering vegetables such as broccoli; bulbs such as onions; fruits such as pumpkin and brinjal; and seed vegetables such as sweetcorn and beans.

Here’s a look at why vegetables are so important, how and where it’s cultivated, and we’ll be focusing on four specific vegetables: potatoes, gem squash, spinach and mealies.
