- 250ml - all-purpose flour
- 1tsp - baking powder
- ½tsp - bicarbonate of soda
- pinch - of salt
- ½cup - brown sugar
- ¼cup - dark chocolate, chopped, plus extra for topping
- 60ml - coconut oil
- ¼cup - peanut butter
- 90ml - soy or nut milk
- 5ml - vanilla essence
- ¼cup - chocolate chips (optional)
Preheat the oven to 180°C. Prepare a baking tray with baking paper sprayed with non-stick cooking spray.
1 Sift all the dry ingredients together in a bowl, add the 60ml (¼c) chopped chocolate and stir through.
2 Melt the coconut oil, peanut butter, nut milk and vanilla essence together.
3 Pour the wet mixture, while still hot, into the dry ingredients and stir together, making sure all the ingredients are well combined and that the chocolate has melted. Once the dough is cooled, add the extra flour and chocolate chips (if using).
4 Roll into small dough balls with your hands and flatten into a cookie shape with a fork.
5 Place the biscuits onto the prepared baking tray and top with the extra chopped chocolate. Bake for 15-20 minutes until golden.
6 Let the cookies cool completely (this is very important, or they will crumble) before enjoying them.
