Ingredients
- - PORK
- 2 - pork fillets (250g each)
- 30ml - olive oil
- 10ml - smoked paprika
- - salt and pepper
- - PINEAPPLE SALSA
- 225g - canned pineapple pieces, drained and finely chopped
- 1 - small cucumber, finely chopped
- 1 - fresh long red chilli, finely chopped
- 60ml - finely chopped fresh mint
- 15ml - lime juice
- - TO SERVE
- 100g - mixed salad leaves
Method
1 Pork Heat a large frying pan over medium heat. Combine the pork, oil and paprika in a large bowl and season.
2 Cook the pork for 10 minutes or until cooked as desired. Turn often. Cover and set aside.
3 Salsa Combine the pineapple, cucumber, chilli, mint and juice in a small bowl. Season.
4 To serve Thinly slice the pork and serve with the salsa and salad leaves.
