Ingredients
  • 375ml - couscous or bulgur
  • ½ - cooked chicken
  • - DRESSING
  • - juice and finely grated zest of 1 lemon
  • 60ml - olive oil
  • 5ml - cumin seeds, toasted
  • - TABBOULEH
  • 1 - red pepper, diced
  • 1 - yellow pepper, diced
  • 500g - cherry tomatoes, halved or quartered
  • 125g - baby spinach, coarsely shredded
  • - handful of fresh coriander, chopped
  • - handful of fresh parsley, chopped
  • - leaves of 1 sprig of fresh mint, finely chopped
  • - salt and freshly ground pepper
Method

1 Prepare the couscous or bulgur according to the package instructions. Fluff with a fork and set aside to cool.

2 Debone the chicken and shred coarsely. Mix into the couscous or bulgur.

3 Dressing Whisk all the ingredients together and pour over the salad. Mix well.

4 Tabbouleh Mix the peppers, tomatoes, spinach and herbs into the salad. Season with salt and pepper.
