Ingredients
- - BASIL AND PINE NUT DRESSING
- 125ml - firmly packed fresh basil leaves
- 60ml - pine nuts, roasted
- 1 - garlic clove, quartered
- 80ml - olive oil
- 7,5ml - red wine vinegar
- - TO FINISH
- 1kg - mixed tomatoes
- - salt and freshly ground black pepper
- 60ml - lightly packed small fresh basil leaves
Method
1 Basil & pine nut dressing In a food processor, blitz the basil, nuts and garlic until coursely chopped.
2 With the motor running, gradually add the oil and blitz until finely chopped. Stir in the vinegar.
3 To finish Roughly chop or halve the tomatoes. Combine in a serving bowl and season with salt and pepper.
4 Drizzle with dressing, and sprinkle with basil leaves.
