Easy, tasty pork curry with veg
500-750g pork pieces or stewing pork, cubed
40ml fresh oil
1 onion, chopped
3 garlic cloves, chopped
1 green pepper, chopped (or use a red or yellow pepper)
fresh ginger and chilli, chopped
10-15ml curry powder and 5ml turmeric
5ml each ground coriander and cumin
650ml chicken or vegetable stock
15ml each chutney and tomato sauce
about 3-3½c chopped veggies, such as butternut, potato, broccoli and mushrooms
15ml vinegar
15ml sugar
salt and freshly ground pepper
chopped herbs for garnishing
1 Fry the pork cubes in the oil. Keep aside. Fry the onion, garlic, green pepper, ginger and chilli until soft. Add the spices and fry until the oil is absorbed.
2 Return the pork cubes to the pot and add the stock, chutney and tomato sauce. Cover with a tight-fitting lid then simmer gently over low heat for 20-25 minutes. Add the vinegar, sugar, salt and pepper, and a little hot water or stock if needed.
3 Add the hard veggies like potato and butternut first. Simmer for another 10 minutes then add the softer veggies and simmer until everything is soft. Mash some of the potato to thicken the gravy. Adjust the seasoning if necessary, sprinkle over the herbs and serve with rice, noodles or stiff porridge.
