INGREDIENTS
- 2 pork trotters
- 4 cups chicken stock
- 1 onion, finely chopped
- 1 clove garlic, crushed
- 1 red chilli, finely chopped
- 1T turmeric
- 2tsp garam masala
- 2T chilli flakes
- Salt and ground black pepper
- 200g baby potatoes
- 200g baby carrots

Method
1. Soak trotters in boiling water for 15 minutes. In a heavy based saucepan, place trotters and stock in pot and bring to boil. Reduce heat to medium and simmer for 2 hours.
2. Remove trotters and broth, reserve kept aside. In the same saucepan heat oil and saute onion, garlic and chilli for about a minute. Add turmeric, masala and chilli flakes, stir together. Return trotters and broth to pot, stir to combine.
3. Add potatoes and carrots, cooking together for further 40 minutes until all liquid has reduced and the trotters are soft and tender. Serve.
