Rum balls

If my mom, Hymne van Schalkwyk, needs to make a quick sweet treat, this is her go-to recipe. Rum essence is very difficult to get hold of, so look out for it at speciality baking stores. You can also use brandy essence (just don’t tell my mom I said so...)

Makes 48 balls

Preparation time: 15 minutes

• 1 tin condensed milk

• 1½ packets (300g) tennis biscuits, crumbled

• 2 ml vanilla essence

• 2 ml rum essence

• 250 ml coconut, lightly toasted

Mix all the ingredients, except the coconut, until they form a stiff mixture. Roll into bite-size balls and then roll them in the coconut until well coated. Store in the fridge.
