1. Rub the potatoes all over with half the olive oil, place them in the basket of your air fryer and bake for 10 minutes. Remove, cool slightly then flatten the cooked potatoes a little so that they burst open – this increases the potato surface.

2. Add the rest of the olive oil and a generous sprinkling of salt to the potatoes and mix through. Place back in the air fryer basket and bake for a further 20 minutes or until golden-brown and crispy. The size of the potatoes will determine the cooking time; you can turn the potatoes halfway through the process.
