1. Heat the oil in a pot and fry the chorizo until crispy. Scoop out (set aside) then fry the onion in the flavoured oil until glossy.

2. Add the potato and flour and stir until combined. Stir in the stock and let the soup simmer for about 20 minutes or until the potatoes are soft.
