1. Heat 15ml oil and fry the chicken until golden-brown and almost cooked. Season to taste with salt and pepper, scoop out and set aside.

2. Heat the rest of the oil and fry the onion until glossy. Add the sweet potato and fry gently for another 5 minutes until the cubes start to brown.
