TRUFFLE HOLLANDAISE
• 125ml butter• 3 egg yolks• 15ml vinegar• 15ml cream cheese• 3ml truffle-flavoured olive oil
1. Make the hollandaise Melt the butter in a small saucepan on the stove or in the microwave until very hot. Place the rest of the ingredients in your blender and process together. Now add the hot butter to the egg mixture in a thin stream while the blender blade is running, and process until thick and smooth. Season to taste with salt and pepper. Set aside.
