1.  Bring three-quarters of the water to the boil and mix the rest of the water with the maize meal to form a paste. Stir the maize meal paste into the boiling water and mix with a wooden spoon until the pap is boiling. Reduce the heat and simmer for about 20 minutes. Season with the salt. Immediately stir the creamed corn and corn kernels into the pap while it’s still hot.

2.  Heat the olive oil in a pan and fry the onion, bacon and mushrooms until fragrant and cooked. Stir in the garlic and herbs and season with salt and pepper to taste.
