1. Preheat the oven and grease eight pretty cups or ramekins with butter.

2. Beat the egg, sugar and jam together. Sift the flour, bicarbonate of soda and salt together in a separate bowl, and mix the butter, vinegar and coffee. Then mix the wet and dry ingredients into the egg mixture alternately.
